Kithul Jaggery is a traditional Sri Lankan sweetener crafted from the pure sap of the Fishtail Palm (Caryota urens). Unlike refined white sugar, it is minimally processed, preserving a rich profile of vitamins and minerals. The sap is harvested by traditional tappers and boiled down over an open wood fire until it thickens and solidifies into its iconic half-sphere shape (traditionally molded in coconut shells).
