Kalupol curry mix is a key Sri Lankan spice blend, known for its dark color and deep, smoky flavor. The name, meaning "black coconut," comes from the process of dry-roasting ingredients like coconut and rice until they are dark. This roasting process, combined with a blend of spices like coriander, cumin, and fenugreek, gives the mix a rich, nutty aroma and a complex taste. The roasted rice and coconut also act as a natural thickening agent, creating a thick and creamy gravy. Added at the beginning of the cooking process to enhance the dish with its signature color, flavor, and texture.

Ingredients:


  • 1kg pork or 1.5kg chicken, cut, washed, and drained
  • 1 tsp turmeric
  • 3–4 tbsp Kalupol Curry Mix
  • 2” piece ginger, crushed into paste
  • 8 garlic pods, crushed
  • Vinegar and salt, to taste
  • 1 large onion, chopped
  • 1 stalk lemongrass, slightly crushed
  • Pandan and curry leaves
  • 2 tbsp coconut oil
  • 1–2 tsp roasted chilli powder (optional, for extra heat)
  • 2 cups water or light coconut milk


Instructions:


Marinate the meat with turmeric, Kalupol Curry Mix, salt, vinegar, and chilli powder if using. Leave for at least 1 hour.

Heat coconut oil in a pan. Sauté garlic, ginger, lemongrass, pandan, curry leaves, green chillies, and onion until aromatic.

Add marinated meat and stir well.

Reduce heat, add water or light coconut milk, and simmer gently until the meat is tender and the curry thickens into a rich gravy.


Serving Ideas:

Enjoy with plain rice, yellow rice, or coconut roti. Complements side dishes like brinjal moju, dhal curry, or cucumber salad.
